A Kati Roll is to Indian cuisine what the burrito is to Mexican. So we figured, why not make a Kati roll using GourGanics spicy alongside the curry to create a vegetarian roll that tastes like nothing you’ve ever experienced before. Hot, sweet, a little spicy. Crisp and crunchy from charred red onions.  Try this recipe today! I like to marinate my tofu overnight, but you do it for as long as you have time.

Here’s what you need:

1/2 cup plain organic Greek yogurt

2 teaspoons minced organic garlic

2 teaspoons minced organic ginger

1 teaspoon garam masala (this spice is easy to find at any grocery store)

2 tablespoons GourGanics Organic Spicy salsa

the juice of 1 organic lime

1/2 organic red onion, chopped

1/3 cup chopped organic mango (fresh or frozen)

6 gluten-free corn tortillas

a few sprigs fresh cilantro, finely chopped

dash or two organic olive oil

Here’s what to do:

For the marinade stir together organic yogurt, 2 teaspoons minced organic garlic, 2 teaspoons minced organic ginger, 1 teaspoon garam masala (this spice is easy to find at any grocery store), 2 tablespoons GourGanics Organic Spicy salsa and the juice of 1 organic lime. Brush this on the tofu and let sit as long as possible. Hold on to a large dollop of the marinade to mix with the the mango chunks before serving.

When ready to grill or use your grill pan:

Heat your grill or grill pan to medium heat, add organic onions drizzled with organic olive oil, then add the tofu and grill until cooked through 3-6 minutes.While the tofu and onions are cooking away, add your reserved marinade to the mango chunks. Warm the tortillas for a few minutes, add your mango-marinade to the center of the tortilla, then pile on the tofu mixture. YUM. top with onions, sprigs on cilantro and serve like tortillas.
