Here’s what you need:
1 Organic white sweet potato ( I like the color)
1 ½ cups pre cooked organic quinoa
½ cup cooked organic kidney beans or ½ can organic kidney beans
1/3 cup GourGanics Spicy Salsa, I added a dash of salt to taste

(Should make 8 patties)

Here’s what to do:

Bake your sweet potato, cook your quinoa and cook dried beans or open and rinse the canned beans. Peel the sweet potato and cut it into chunks (don’t fully mash it). Fold all ingredients together and when cool enough, use your hands to form patties. Line a baking sheet with parchment paper and spray with a thin layer of organic cooking spray or oil of your choice. Place in 350-degree oven for 15 minutes, till crispy, then flip with a spatula and bake another 15 minutes. Serve as a vegetarian burger on a thinly sliced whole grain bun or on top of a bed of greens. I made mini burgers and dipped them in salsa as an appetizer.

Topping suggestions for this burger or any salad:

Salsa!
A crumble of vegan cheese
Combine two tablespoons Greek yogurt or sour cream with one-tablespoon salsa and mix till combined.

FUN FACT:
Quinoa is the only plant-based protein to contain all 9 essential amino acids. Quinoa is not a grain but it acts like one, it’s actually the seed of a plant related to spinach.
