These stuffed peppers are not only delicious, they are so pretty and fun to eat. I love to make these any time of year but they sure do add a splash of bold color as a holiday side dish. It’s a fun project that yields easy results with very little work. My nine-year old daughter can complete this entire project on her own. This recipe serves 4.

Ingredients:

2 large red, yellow, orange or green peppers

1 cup GourGanics salsa

4 tomatoes chopped into quarters

1 cup Ricotta cheese

To make them:

Cut the peppers in half and seed them

Mix ingredients together and neatly fill each pepper

Garnish the top with a touch of salsa

Cook in a 450 degree oven for 15-20 minutes, let cool for 5 minutes lift off the baking tray carefully with a spatula and serve.
