If your family loves tacos, this recipe will rock their world. My excessively cool nephew Konrad is a serious Taco fan. He is way cooler than me. I’m planning to add this to tomorrow night’s menu as we share a family meal. Grass-fed beef is always best!

Here’s whatcha need:

1 pound grass-fed ground beef

1 cup chopped organic onion

1 jar  GourGanics spicy salsa (KONRAD likes the spice)

2 cups red kidney beans

2 cups crushed organic Fritos-style corn chips

1 cup grated melting cheese (taco mix, jac or cheddar)

Splash of water

1 3/4 shredded lettuce

1 cup diced fresh tomatoes

sour cream or plain Greek yogurt

Here’s whattado:

Preheat the oven to 350 degrees.

Cook the beef and onion in a heavy skillet, drain off the fat and then add the salsa, add a few tablespoons of water to jar to pick up all those extra bits of salsa goodness, add to beef mixture. Place 1/2 the meat mixture in a well buttered or greased casserole pan, add about half the kidney beans (1 cup), and half the corn chips (1 cup). Repeat the layers and then cover with shredded cheese and bake (covered) for 30 minutes, remove the cover and bake for 10-15 more minutes. serve on a small bed of chopped lettuce and cover with chopped tomatoes and sour cream or plain Greek yogurt.
