This is a creamy and luscious way to add a complexity of flavor and sophistication to something as simple as a few leaves of butter lettuce served on a chilled glass plate or as complex and heavy as a chopped cobb salad. I adapted this from a recipe I first encountered in 1996. This dressing is out of site!

Here’s what you need:

2 large ripe organic avocado peeled

1/2 cup plain greek yogurt, sour cream or vegan replacement

1/3 cup GourGanics Salsa

3 tablespoons vegetable oil

1 teaspoon finely chopped cilantro

Here’s what to do:

Place avocado and remaining ingredients into a blender, and process until very smooth and creamy.

This recipe is best used right after you make it, but you can keep it fresh by mixing in 3-5 tablespoon lemon or lime juice. If you are waiting to serve it, place the pits of the avocado into the dressing until you serve it (this keeps it fresh longer) and press a piece of plastic wrap well down on the surface to stop air pockets from forming and discoloring your dressing. Before serving, remove the pit and stir it thoroughly.
