Yesterday was a big day for us here at GourGanics. We got our TradeMark certificate, all cutesy with an official gold seal and everything. So, last night we took a night off from making dinner. And tonight…well we’ve been busy but the house still smells amazing as a simple dish bubbles warm and inviting from my WOK. Oh, yes…you heard it. Mexican stir fry in my wok.
The best thing about stir fry is the “mustgo” aspect. When you have a few things in the fridge that simply must go…or perhaps at this time of year there are fresh veggies from your local CSA or backyard garden. Well, you can add so many delicious things to a Wok and make a simple, delicious meal, why not try Mexican? Here’s what we did this Thursday, August 17th–we may never eat this exact recipe again. But then again…maybe we will.
Here’s what we had:
–dash of olive oil
–a little over one pound of organic chicken thighs (I buy them with bone out at local healthful grocer) and cut into bite sized pieces
–one organic onion , chopped
–a handful of chopped Pancetta (adds a really nice balance of flavor)
–1/2 jar GourGanics, we used spicy
–frozen red, green and yellow organic pepper strips (not much, maybe a half cup) I froze these myself a few weeks ago when I had too much fresh to eat
—side of rice ( I used a frozen organic brown rice because I was short on time, it’s always better to hydrate and cook it yourself)
–Organic cheddar, low fat cheese, whatever you like (very optional, hubby likes it, kids like it)
Here’s what we did
I used a Wok–you don’t have to, a regular frying pan will do but I like the way you can regulate what gets heated when by building on from the middle. I usually add onions first, then protein, then veggies and flavors.
Add a few teaspoons of olive oil to your pan and let it get shimmery.
Add a small chopped onion, let it cook for a few minutes
Add pancetta and wait one minute, stirring and tossing here and there like you would a stir fry
Add chicken and cook for 5 minutes
Add 1/2 jar of GourGanics, and @1/2 cup of water on top
Let it simmer, then add fresh or frozen peppers or whatever veggies you have on hand, stirring and tossing here and there like you would a stir fry
Let simmer and stew for 2-3 minutes, stirring and tossing as needed
Serve it over a side of rice with a handful of cheese as a pretty, tasty garnish.
After we ate, I had leftovers. I put one layer of rice into my casserole dish, dumped the contents of my wok, the rest of the jar of GourGanics rinsing the jar with a few tablespoons of water to get all that goodness in. After I layered that on top of my rice, I layered on the cheese. You could freeze this, but we end of throwing in it the oven for a tasty lunch or dinner!
You could turkey or beef, or even Tofu and get similar results. Hope you love it!
