1 pound lean organic, grass fed ground beef
1/2 cup or so finely chopped organic onion
2 cups organic free range chicken broth, low sodium is best
1 15-ounce can red kidney beans or black beans (whichever you prefer), drain and rinse them with water
1 cup uncooked rice
1 cup GourGanics Salsa
½ cup shredded Organic shredded cheddar/jack cheese or a dairy free substitute
10 6-inch organic whole wheat, flour or corn tortillas ( these can be steamed by covering each tortilla with a wet paper towel and zapping in the microwave for 10 seconds).
Instructions:
Brown beef and onion in large skillet; drain. Return meat to skillet; stir in broth and wait until it boils. Then add beans and uncooked rice. Return to a boil. Cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender and liquid is absorbed. Stir in salsa and cheese. Serve in tortillas, with a side of GourGauc and sour cream.
