This is a recipe my Funkadelic Rock Star friend Jen Durkin loves. It’s easy enough to make even when she has a gig for Deep Banana Blackout. So pop it in your oven, then pop it in your mouth. It’s hot, it’s spicy, it’s a funky little chicken. Just like Jen. Jen loves using GourGanics Salsa as a simmer sauce. And you will too.
Take 4 Medium size chicken breast, butterfly them. Pan fry in olive oil for a few minutes, just to get a little brown.
Place in a square baking or brownie pan.
Fill the centers with salsa and sprinkle with cheese or a dairy replacement.
Fold them over and drizzle with olive oil.
Sprinkle with Jerk seasonings and breadcrumb.
Cover with the remainder of the jar of GourGanics
Bake for 35 minutes.
Serve with brown rice and enjoy!
