There’s nothing more delicious than a GourGanic pulled pork sandwich with mango and black beans. I served this recipe to a group of friends on Thursday and the crowds went wild. It’s easy, not as simple as some slow cooker recipes but definitely worth the extra time.
Here’s what you need:
1 4-5 lb organic pork butt or shoulder
1 bag frozen organic mango (16 oz)
1 organic apple (in chunks)
1 large organic onion (rough chopped)
1 jar GourGanics Spicy
1 can organic black beans
1/2 cup organic shredded cheese (optional)
Unwrap the pork and pat it dry. Place it in crock pot and cover with water, add apple and onion, and cook in slow cooker on low for 8 hours.
Remove all liquid ( you have rendered the fat so throw it out) plus the apple and onion from slow cooker and discard
Use two forks to shred the cooked pork
Add mango, beans and salsa, swish 1/2 cup water in salsa jar to add extra bits of salsa goodness and a little liquid.
Cook 45 minutes or more and serve with white rolls or soft taco shells and shredded cheese if desired
