Nothing says summer quite like fresh Bruschetta. Why not try it with a little spice? This is the easiest way to make this delicious dish and serve it as a side dish or a meal. Salsa makes a great base. Grill your bread and warm your topping. Sprinkle on a little cheese on top and enjoy pure perfection.
Ingredients
• ½ jar GourGanics Salsa
• 6-8 fresh cilantro leaves, chopped.
• Salt and freshly ground black pepper to taste
• 1 baguette French bread or similar Italian bread
• 1/4 cup olive oil
• 1/2 cup shredded cheddar
How to
1. Mix ½ jar salsa with fresh cilantro leaves, and olive oil, add a few chopped fresh Roma tomatoes if you wish. Place in a saucepan and warm it until it just bubbles.
2 Make sure there is a top rack in place in your oven. Turn on the oven to 450°F to preheat.
3 Slice the baguette on a diagonal about 1/2 inch thick slices. Coat one side of each slice with olive oil. Place on a cooking sheet, olive oil side down. Toast them in the top rack in your oven, in batches depending on the size of your oven. Toast for 5-6 minutes, until the bread just begins to turn golden brown. Or you can grill it or use the griddle.
Top each slice with your topping, a small sprinkle of cheese and serve it up.
Serves 6-10 as an appetizer. Or 3-4 for lunch
