Pop these little crustless quiches into the oven while watching the kids unwrap presents Christmas morning or as an easy evening meal. They’re so pretty and festive, everyone will think they took hours of prep time. And for anyone counting carbs, these are South Beach Diet approved. Carb and gluten-free. Yippee! You can freeze leftovers for an easy microwave meal on another day.
Here’s what you need
1 tbsp Organic olive oil
1/4 cup Organic yellow onion, diced
1/4 cup GourGanics
1 cup Organic baby spinach leaves, roughly chopped
1/2 cup Organic mozzarella cheese, shredded
4 local organic eggs
1/4 cup organic milk
1 tsp kosher salt
fresh pepper
Here’s what to do
Pre-heat your oven to 350 degrees. Line a muffin tin with foil baking cups and spray with cooking spray (or simply spray the muffin tin directly with cooking spray). In a medium frying pan, heat olive oil over medium-low heat, then add onions. Saute, stirring occasionally, until onions begin to soften, about 3 minutes. Add spinach leaves and stir until spinach has wilted, about 2 minutes. Add salsa. Transfer vegetable mixture to a bowl and allow to cool slightly. Add cheese.
Whip up your eggs, milk, salt and pepper, then pour over the vegetable-cheese mixture and stir to combine. Divide evenly among 6 muffin cups.
Bake until eggs have set, about 20 minutes. The cups will puff during cooking and then flatten just a bit as they cool.
