My grandmother, Memere had our entire family on the cabbage soup diet without even knowing it. She whipped up a version of this soup using garden veggies in the summer, store-bought veggies in the winter. She chopped up the veggies and simmered the soup below for just a while, she served it up steaming hot and some of the vegetables were still a little crisp and crunchy. Mem served it with a small side salad and a “nice” sandwich. My cousins, neighbors, and any one else who walked through the door of their cozy little home in West Hartford were always welcome to share. We always felt great after we ate. No wonder.Between those two loving people telling jokes, laughing and encouraging us, there was no doubt in our minds, we could do anything we set out to do. And with that soup in our bellies, we were ready to take on the world.
People eat nothing but this soup for 7 days and claim they lose weight. I’ve never done it myself, but I do make this soup and eat it with gusto. Fat free GourGanics adds a cleansing layer of yum. I’ve been known to add a dollop of organic sour cream and a sprinkling of local cheese before serving, but that is NOT part of the diet routine. This diet has been around since the early 1950s and goes in and out of fashion. Do with it what you will. What a satisfying way to eat your veggies!
What you will need:
- 6 large green organic onions
- 2 green organic peppers
- 1 or 2 cans diced organic tomatoes
- 1 bunch of organic celery
- 1 envelope of dry onion soup mix (lower sodium organic if possible)
- 1 or 2 veggie bouillon cubes (You can also replace with concentrated veggie, fish, beef or chicken stock)
- 1 large head of cabbage
- 1 16 oz jar of GourGanics
How to make it:
Cut veggies into small pieces and covered with water and salsa in a large pot. Bring to a boil and simmer 15-20 minutes or until vegetables are tender. Eat it all week and you’ll feel great. The diet claims you will lose weight if you eat nothing but this clean soup for 7 days. Good luck with that. I need variety in my life.
