I took my cousin and her kids to Fairfield beach over the weekend. My sister picked us up in her boat and a short day at the beach turned into a long exciting thrill ride, including wake boarding and way too much sun. We got back to the house and we were starved! Instead of dialing for take-out, I pulled together something super-quick that was easy to make, somewhat healthy and completely satisfying. Pepper steak and rice.
The key to the quickness was a bevy of frozen veggies. Last week we did a salsa photo-shoot. All of that gorgeous organic produce was too much for us to consume. So we cleaned, chopped and put the fresh crisp peppers ad onions into frozen baggies for another day. I also had organic frozen brown rice from my local health food store. I always keep that frozen rice on hand. It microwaves in three minutes. SO easy.
I added two cups of organic peppers and onions to a hot frying pan.
1/2 jar GourGanics salsa
1 container precooked frozen organic brown rice, microwaved
a dash of tomato juice, wine, water or chicken stock, to keep everything a little wet and juicy
Before I left, I defrosted a small New York Strip steak, but any cut will do. I cubed it in small pieces and added it with a few dashes of garilc powder for the last 5 minutes of cooking.
Salt and pepper as needed.
We relaxed, drank a few beers and ate our meals faster than it takes to bake frozen chicken cutlets or get a pizza delivered. A perfect ending to a truly special day.Of course fresh produce works even better than frozen, but may take a little longer to cook.
