Thanks to a recipe from Circle of Mom’s and my good friend Nancy, we have learned that roasting broccoli at a high temperature and sprinkling with salt creates a crispy, sweeter and more delish dish. I’ve never been the greatest fan of broccoli as a side dish. But I know it’s super good for me.  I have to say, I like it this way. A lot. It tastes completely different than if you boil or steam it. And roasting locks in so many nutrients that are often lost in the boiling process.
Ingredients

* 1-1 1/2 lbs broccoli florets, washed, dried & cut in 1″ pieces
* extra virgin olive oil
* salt
* freshly ground pepper

Preheat the oven to 450 degrees. Place the broccoli in a mixing bowl and add a few tablespoons of olive oil. Sprinkle with salt and pepper and toss until all the broccoli florets are generously coated with the oil. Spread out on a rimmed baking sheet. Roast until the broccoli is just soft, about 15-20 minutes, turn once or twice to ensure even cooking.
