It was a rainy, icky day here in Connecticut. Early Spring is soo moody in these parts. So I decided to create a yummy, comfort food meal for my family. Hope you enjoy.

Here’s what you need:

3 tablespoons organic olive oil, 1 organic onion, chopped, 2 pounds organic pork loin, cut into 1 inch cubes

1/2 cup organic all-purpose flour, 3 (14.5 ounce) cans organic chicken broth, 4 cups water (organic) (kidding), 4 organic potatoes, peeled and cubed, 6 organic green chile peppers, chopped, 1 (15 ounce) can organic black beans, undrained, 1 (15 ounce) can organic kidney beans, drained, 5 cloves organic garlic, minced, 1/2 jar Spicy GourGanics

Here’s what to do

  •  Saute  oil and onion in your pot over medium heat for 5 minutes, onions should be tender. Coat the pork in flour and add to the pot. Quickly brown the pork until it is a lovely color.
  • Add the broth, salsa, water, potatoes and chile peppers. Bring to a boil and reduce heat to low. Simmer for 15 minutes, or until potatoes are tender. Add the black beans, kidney beans, garlic, and salt and pepper to taste. Simmer for about a half an hour and enjoy.

This is great meal to make ahead and reheat after soccer practice or whatever keeps you out late!
